Mangalore Buns!

 Hello....

Wanted to post this in desperation as the year ends.... Since it had been sometime I last blogged & did not want the year pass by without any posts for long.... Hence here posting in a jiffy...

It's Mangalore Buns.... 😍 (a long lost post from a long lost blog)

Well... Mangaloreans like all others everywhere have our own memories attached to this prep & my most memorable one is with my uncle (bade papa) who worked with the Indian Post as a Post Master in Puttur Taluk of Mangalore District... As a kid going to him at his post office by evenings was a TRIP I looked forward to who would then take me to badi maa who worked at the Taluk Office of Puttur... but before he took me to her, he would treat me with a mangalore bun + coffee.... we would then go templing.... shopping.... hoteling only to go back home around 8:30 pm to 9:00 pm.... Exhausted would bathe & then go to bed directly after sharing my experiences with mom... I was a school going kid... 

So that is where my unforgettable memories of mangalore buns lay... Childhood Memories... I lost him to cancer as a college going girl.... He gave me values I proudly treasure in my journey of life.... Missed him always.... Lost few gems in my life even before I could know LIFE & its JOURNEY... 😢

Hmmmmmmmm..... am still here & ought to live on until the end.... & find my reasons to be happy being alive cuz it isn't possible to live on in monotony....

So preparing few dishes that I love & those that love me back is one strong reason I found to be happy with.... & Mangalorean Preparations cater to it cuz of their simplicity & health quotient....

So here is Mangalore Buns for you..... 💁


Ingredients:

Curd/Buttermilk - 2 Cups

Maida (Plain Flour) - 2 Cups

Sugar (small crystals preferably) - 3/4 Cup

Salt To Taste

Cooking Soda - 1/4 tsp

Banana (ripe) - 2 Small/1 Big

Atta (Wheat Flour - Optional) - 1/2 Cup

Oil to Knead The Dough - 1 tbsp

Oil to Fry

Instructions :

1. Into a deep bottomed vessel add in sugar

2. Then to it add in the curd/buttermilk & give it a good mix until the sugar dissolves completely

3. Now add in the banana & mash it well so no lumps are left... Tiny Lil crumbles are manageable

4. Once you sense the liquidity of the solution add in salt & cooking soda & give it a good mix

5. If adding atta which is optional add in now & give it a good mix

6. Once done keep adding in the maida in small amounts until it blends in well (it takes time to be ready as a settled dough)

7. Once you feel the mixture has thickened a lil, being less sticky onto your hand, knead the dough with enough portions of maida from time to time

8. Once the dough is under control, baste it with a spoonful of cooking oil & knead it further into a soft dough

9. Now set the dough aside in an airtight container or lid closed for at least 8 hours (overnight dough is good for breakfast)

10. Once done make lil balls like for the size of poori, roll it down to flatten it to a decent roll & deep fry it.... as it is ready to fluff up thrust it down a lil on all sides in the oil or splash lil amounts of oil on it to help it fluff up well.... erect & full

11. Now flip it to allow it to cook on the other side too.... Do not over fry with difference in brown on either side... the brown should seem even on both the sides

12. Relish them as is when HOT.... or with chutney/gravy/curry of your choice
