Kerala Appam/Karnataka Appa

 Hello....

It was new year & it is already March 2025... Pheww 😓 

The pace at which the time flies is so scary.... 

Well this post is not for me to rant about the passing time... It is me revisiting one of my previous posts... APPAM.... With time I found a new way of preparing it & both the process & the outcome satisfied my core... Hence thought it would be best to journal the same for my future reference as well as yours.... 😍

Savoring it with a heaven made accompaniment feels so divine that it fills your tummy & leaves your soul still wanting for more....


Let's get down to the recipe....

Ingredients :

Raw White Rice - 3 cups (serves 4)

Coconut Milk - 1 tetra pack of 200ml or you can use the homemade milk too

Water to grind the rice to a smooth batter - (use the diluted water of the coconut milk)

Yeast (dry or instant ) - 1 & 1/4 tsp

Salt to Taste

Sugar - 4-5 tsps

Hot Water - 4 tbsps approximately


Instructions :

1) Wash the rice thoroughly & soak it overnight.

2) Morning drain the excessive water & empty the rice into a mixie jar

3) Empty the coconut milk to the jar & run the mixie.... If seems difficult after sometime add in the diluted part of the coconut milk & run the mixie to grind the content to a smooth batter/paste

4) Now empty the batter into a deep bottomed bowl or utensil

5) Now add hot water into a small bowl or cup. To this add in salt + sugar & mix well so the content dissolves completely. Now add the yeast & mix well. Once everything seems dissolved, add this water into the batter & whip it just fine 

6) Now keep this covered in a warm place for it to ferment well for 6-7 hours

7) You would see the batter has risen to be fluffy with bubbles 

8) Whip this batter well.... If the batter is thick pour few ladles of the batter into another bowl & add in a lil water... The remaining thick batter can be refrigerated for future use.

9) Adjust salt & sugar if necessary... Appams are supposed to be a lil sweeter...

10) Heat the appam pan & when hot just pour a ladle of batter & turn it 360 degrees so the batter covers the pan to look like a white bowl... Cook it covered for 2 minutes or less & then remove it to a plate by hand or a spatula

If the batter is a lil thin the appams would be soft but if it is a lil thick the appams would have a thick crunchy base... So choose as per your taste...



11) Now a variation here is you could also pour the appams into a appe/paddu/appadittu pan to make mini versions of the same as shown in the pic below....


 12) Now relish your appams with veg/non veg stew OR curry OR simple chutney... It tastes good with anything but divine with stew...
