Hello....
Been a while again since my last post.... However this particular DISH/PREPARATION is a repeat of the one previously posted... NEER DOSA But that went without few details & a lil different ingredients.... Hence thought would redo this with a lil more insight to this very favorite prep of mine....
Ingredients :
Raw Rice (any) - 2 cups
Coconut Milk - 1 cup/packet/Sachet
Salt & Sugar To Taste
Water
Coconut Oil
Instructions :
1) Wash & Soak rice overnight
2) Morning drain out the water & empty the rice into a mixie jar...
3) Pour the coconut milk into the jar & grind it into a smooth paste/batter (but remember to not add water or more water cuz we want the batter to be thick making it easier to store in the refrigerator to be used eventually)
4) Empty the batter into a storage container & remove ONLY the portion required for that moment... as shown in the video below.... which should not be more than a cup OR a couple of ladles cuz it needs to be watered
5) Add in a cup of water or a lil more as required to prepare the dosas... Free flowing liquid & not diluted completely cuz then it would be difficult to remove it from the pan or tawa.... (it would just seem watery & stuck to the pan)
6) Add in the required amount of salt & sugar to taste & mix well....
7) Now heat the nonstick tawa/cast iron pan/ dosa tawa on high flame.... Once done brush coconut oil (as lil or as apt as a tsp) on to the hot tawa & lower the flame to medium...
8) Now pour the thinned batter with the deep round shaped ladle to cover the pan... You would see that allows space for holes of all sizes in the thin dosa....
9) Cover the lid & higher the flame.... Allow it to cook so for a minute & then lower the flame to medium... further allowing it to cook for another couple of minutes & then uncover the pan & you would see the sides turned crispy leaving the pan.... (That's Your Cue)
10) Fold the dosa into half & Remove the dosa with the help of a flattened spoon ladle & transfer it to another plate...
11) Repeat until you have consumed all the batter for that moment...
12) Serve it hot or cold (as you like it) with chutney or curry of your choice!
I love savoring it with chutney or non veg curry or simply plain tea or coffee too.... 😋

I remember preparing it for my first & last KITTY PARTY in Ranchi in 2014... The ladies there who weren't aware of this prep found it very interesting & sumptuous too....
